Bruschetta Chicken
Oh my goodness, I am so excited to write this post. This chicken is definitely a new staple in my house. I do not like plain rice, or tomatoes, or balsamic vinegar BUT I LOVE THIS RECIPE. I don't know how it happened, but having them all mixed together just made it taste amazing.


This recipe is for bruschetta chicken. To make this a fully balanced meal I paired it with plain jasmine rice (cooked in an instant pot) and asparagus (steamed with garlic and lemon on the stove).
First, you are going to chop your tomatoes and trim your chicken breasts.
Then, season your chicken and cook the chicken on medium heat in a skillet for about 5 minutes each side.
While the chicken is cooking you can put all the ingredients for the bruschetta together and set aside, as well as cook your balsamic into a glaze.
Everything is done around the same time which is awesome.

After the chicken is cooked, balsamic vinegar thickens to a glaze, and your tomatoes are prepped all you gotta do it assemble it! I put 1/4 cup of rice on the plate first, then chicken breast on top of the rice, tomatoes on top of the chicken, drizzled the glaze on the bruschetta chicken, and placed the asparagus on the side. EASY PEASY MY FRIENDS!
Ingredients:
Chicken-
1 TBSP olive oil
2 TBSP Italian seasoning
salt and pepper to taste
3 chicken breasts
Bruschetta-
4 ripe roma tomatoes
2 TSP balsamic vinegar
1 TSP basil
1 TSP oregano
1 TSP italian seasoning
2 TSP minced garlic
1 TBSP olive oil
1/4 TSP salt
1/4 tsp pepper
Glaze-
1 cup balsamic vinegar
Instructions:
Prep vegetables and chicken by trimming the chicken and chopping the tomatoes.
Season chicken with oil and seasonings. Cook chicken about 5 minutes each side in a skillet over medium heat until chicken is cooked through.
While the chicken is cooking also simmer the balsamic vinegar in a small saucepan for 10 minutes. Set glaze aside to let thicken after 10 minutes.
While the chicken and glaze are cooking assemble all the ingredients for the bruschetta in a medium bowl and set aside.
When the chicken and glaze are finished assemble the bruschetta chicken by placing the tomatoes on top of the chicken breast and finish by drizzling the glaze over the tomatoes and chicken.
As said earlier, I paired my bruschetta chicken with plain jasmine rice and asparagus. It was the perfect combo! Hope you enjoy!
