Comfort Food Chicken Noodle
After our trip to Colorado I went on a big soup kick. I had never made a home cooked chicken noodle soup so I went searching to find a great one!
Austin called it "chicken noodle pasta" because it has the consistency as a creamy pasta as opposed to a soup, but tastes like soup! Personally, I love it!!
This is perfect for family dinner with a side salad or a warm meal to bring to work with you!
This recipe is so simple and easy anyone can make it!
Ingredients:
3 cups rotisserie chicken (cooked)
1 (10.5 oz.) can condensed chicken soup
6 cups low-sodium chicken stock
1 cup skim milk
1/2 cup chopped celery
2 medium carrots, sliced into rounds
1 (1 oz.) packet Ranch dressing mix
1 1/2 cups shredded mild cheddar cheese
1/2 cup cream cheese
8 oz. Spaghetti noodles (uncooked)
Recipe:
Shred rotisserie chicken and prep vegetables
Add everything but the cheddar cheese and spaghetti into a large stock pot and bring to a boil
Bring heat to a simmer and simmer for 20 minutes
Add noodles and cheddar cheese and cook until noodles are done (about 8-10 minutes)
