Dry Rubbed Chicken

This recipe was perfect for my meal prep this week! I wanted something quick, easy, and full of flavor. I came across this recipe on Pinterest and absolutely loved it. This chicken was juicy and PACKED with flavor.


I paired the chicken breast with asparagus and sweet potato fries; a perfect meal. The asparagus was tossed in lemon juice and garlic and baked when the chicken was cooking. The sweet potato waffle fries are Alexia brand, found in the frozen section, that I also baked with with the chicken!




Ingredients:

  • 5-6, 4-6oz chicken breasts (I had larger 12oz ones and sliced them in half!)

  • 1/4 cup brown sugar

  • 3 Tbsp smoked paprika

  • 1 Tbsp chilli powder

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 1 Tbsp dried thyme

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp butter (1/2 tsp for each breast)

  • large Ziploc bag



Instructions:

  • Mix all the seasonings together in a large bowl or directly into a Ziploc bag that can fit all the chicken breasts

  • Place the chicken in the bag with the seasonings

  • Shake shake shake until they are all coated

  • Put Ziploc bag in fridge for 30min up to 24 hours to lock in the flavors

  • When ready to cook preheat the oven to 425 degrees

  • Place chicken on a tinfoil (sprayed with nonstick spray) lined baking sheet

  • Plop 1/2 tsp of butter (avocado or grass-fed butters are my go-to) onto the top of each breast

  • Cook for about 20min or until internal temp is 165 degrees

  • Serve immediately with your favorite sides or store in the fridge for 4 days
