No Bake Energy Balls 2.0

If you haven't tried making these balls of yumminess you are truly missing out.

I made a post a few weeks back with my first No Bake Energy Balls recipe. I have had so many people reach out through social media telling me how delicious and easy they are.

They are an absolute staple in my house for a grab and go breakfast, in-between meals, or pre-workout. There are numerous ways to make these fun little treats, find what you like. For me, chocolate chocolate chocolate!!

I did a poll this week on my Instagram (follow me here if you don't already --> kaylashafer.fitness) to see who wanted a new recipe for the energy balls or a new pineapple smoothie recipe. The poll was basically unanimous!!

So without further or do, here is another great way to make some delicious no bake energy balls!

Important- you will need a food processor or a great blender! I used a Nutribullet the first time I made these and it just took a little while longer to blend the dates and honey into a paste. The second time I used a food processor (thanks Tammi Taylor!!) and it was much easier. However, I did have to scrape the sides on both methods.

Ingredients-

  • 1 cup dates (I used Sunsweet Chopped Dates)

  • 1/2 cup honey

  • 1 Tsp salt

  • 1 cup old-fashioned oats (uncooked)

  • 1 cup shelled pistachios

  • 1 cup dried cranberies

  • 1/3 cup white chocolate chips (or more if you're like me hehe)

Instructions-

  1. Combine honey, dates, and salt in a food processor or blender and blend until a paste is made

  2. Place remaining ingredients into a mixing bowl and stir in the paste

  3. After mixed evenly store in the fridge for 30 min for the ingredients to set

  4. After 30 minutes roll into 1 inch balls and store in the fridge
