Sausage Bake

This meal is an absolute staple in my house. We love it because Austin can take it to work for an easy dinner, eat it as a fast post workout meal, and it gives us some veggies without tasting boring and plain!


This recipe is so simple to throw together and would be perfect for any family dinner or meal prep option.


You can basically use any veggies that you have on hand, but I have been using the same vegetables every time because I love the variety and the colors!



This recipe is so awesome to get a few servings of vegetables, nice carbohydrate source, and protein with a bunch of flavor! Typically, I use fresh green beans, asparagus, bell pepper (I prefer red, orange, or yellow to give it a pop of color and different vitamins/minerals than an all green dish), red potatoes, and sausage. Again, you can use whatever vegetables you have on hand or love; broccoli, cauliflower, squash, etc. I have attempted other meats like chicken and chicken sausage but the result wasn't as good because the flavors from the sausage fat help coat the vegetables to taste amazing!



Ingredients

  • 2 red bell pepper

  • 2 red potatoes

  • 2 handfuls fresh green beans

  • 1/2 bundle of asparagus

  • Hillshire Farms Beef Polska Kielbasa Sausage (12oz)

  • 2 Tbsp olive oil

  • 1/4 teaspoon red pepper flakes

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1 tablespoon dried oregano

  • 1 tablespoon dried parsley

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Spray large sheet pan with nonstick spray

  3. Prep

  • slice sausage thinly into disks

  • trim ends of asparagus and cut in half

  • chop potatoes into small rectangles

  • chop bell peppers into small rectangles

  • trim both ends of green beans

4. Place vegetables into large bowl with sausage and potatoes

5. Pour olive oil and seasonings into bowl and mix well to coat all vegetables

6. Pour meal onto pan and bake for 30 minutes, or until potatoes are soft and sausage browned

7. Enjoy!
