Taco Tuesday!

I have always been one to make tacos pretty boring. Corn tortilla, ground turkey with taco seasoning, lettuce, and maybe some cheese. Don't get me wrong I love tacos this way, but I have never experimented with other varieties!


Last week this changed and lord have mercy! I got a new cookbook which is where I'm foreseeing a lot of my recipes to come from. This taco recipe was in there and I was a bit skeptical. I mean come on, I have been making tacos the same way for 7 years and they taste just fine!! It looked a little bland and dry; however, it was everything but! I am very picky when it comes to food so I was pleasantly surprised when I took a bite into this taco and instantly fell in love. I almost ate the taco without snapping a picture!!


Recipe from Healthyish cookbook

Ingredients:

  • 3 Avocados

  • Lime juice

  • Salt

  • Red pepper flakes

  • Rotisserie chicken

  • Pico

  • Cotija cheese

  • Corn tortillas

Instructions:

  1. Mash avocado and sprinkle in salt and red pepper flakes to taste. Add small squirts of lime to your liking

  2. Spread avocado mixture onto corn tortillas

  3. Shred rotisserie chicken and place onto corn tortilla

  4. Add pico and cotija

  5. Enjoy your bomb taco!
